White Sauce for Asparagus

I credit my father with my interest in making crepes. I can still picture him grinning while flicking the skillet with his wrist, the crepe becoming airborne and flipping, and him catching it.
Crepes are a perfect delivery system for fresh asparagus from the vegetable garden.
But a crepe alone is not enough.
I think an asparagus crepe deserves a creamy white sauce.
Mom always said, “Just remember 2-2-1,” when I asked about making a white sauce.
Here’s her simple recipe:
White Sauce for Asparagus
INGREDIENTS
- 2 tablespoons of butter
- 2 tablespoons of flour
- 1 cup of milk
PREPARATION
- Melt the butter in a saucepan;
- Remove saucepan from heat and whisk in the flour to get a paste;
- Whisk milk into paste;
- Return to the stove and heat gently until it starts to boil and has thickened.
Note: Add shredded cheese if you want a cheesy flavour.
