Spinach Stuffing
SPINACH AS A STUFFING
If you have more spinach than you care to eat fresh, don’t forget that it makes a great stuffing. I prefer cooked spinach this way, rather than as a bowl of stand-alone cooked green mush.
- Cut a chicken breast nearly in half width-wise. Fold back top half.
- Stuff with chopped, uncooked spinach.
- Fresh goat cheese or feta is nice too.
- I like to throw in some roasted red pepper.
- Replace top half.
- Tie together with a couple of strands of butcher twine, then bake.
