Lanttulaatikko Turnip Casserole

It is easy to grow turnips in the garden.By Steven Biggs

When I complained to Amie that my wife and kids make strange faces when served turnips from my garden, she had a suggestion.

Lanttulaatikko.

I don’t know how to pronounce it either, but no matter. It can disguise turnip so that even the most ardent turnip haters will try it.

Turnips are easy to grow. They store well too. All you need is a way to prepare them for fussy eaters.

Don’t tell them it is turnip.

Say Lanttulaatikko, which is the name for this traditional Finnish recipe that is served as part of Christmas dinner.

Lanttulaatikko Turnip Casserole
INGREDIENTS

  • 2 turnips

  • 3 tablespoons of flour

  • 2 tablespoons of sugar

  • 1 egg, beaten

  • 3/4 cups of cream

  • 6 whole allspice, ground (or about 3 tsp ground)

  • 1 teaspoon salt

  • 1/4 cup maple syrup

  • bread crumbs and butter

PREPARATION

  • Boil turnip until cooked;

  • Mash, then mix in flour and sugar;

  • Add egg, cream, allspice, and salt;

  • Beat until smooth, adding syrup a little at a time;

  • Place in greased casserole dish;

  • Sprinkle with breadcrumbs and dot with butter;

  • Bake at 350°F until it starts to bubble over;

  • Then reduce the heat to 250°F and bake until crispy and sides come away from dish;

  • Cooking time should be about 1 ½ hours.
